  • 2 lbs boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1 can crushed tomatoes (or 2 cups diced fresh tomatoes)
  • 5 tablespoons unsalted butter
  • 1 cup heavy cream (or plain yogurt for a lighter version)
  • 4 cloves garlic, minced
  • 2-inch piece ginger, grated
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, combine chicken pieces with salt, turmeric, and half of the garam masala. Let it marinate for at least 30 minutes.
  2. In a large skillet, melt 3 tablespoons of butter over medium heat. Add minced garlic and grated ginger, sautéing until fragrant (about 1 minute).
  3. Add the marinated chicken to the skillet, cooking until browned on all sides (about 5-7 minutes). Don’t worry if it’s not fully cooked; it will finish cooking later.
  4. Stir in the crushed tomatoes, remaining spices (cumin, paprika, and garam masala), and a sprinkle of salt. Allow the mixture to simmer for 10-15 minutes, letting the flavors meld together.
  5. Reduce the heat to low and stir in the heavy cream, mixing until everything is nicely blended. Cook for an additional 5 minutes.
  6. Stir in the remaining tablespoon of butter for that luxurious finish. Taste and adjust salt if needed.
  7. Serve hot, garnished with fresh cilantro, and enjoy over your favorite rice or with warm naan.
