- 1 can crushed tomatoes (or 2 cups diced fresh tomatoes)
- 5 tablespoons unsalted butter
- 1 cup heavy cream (or plain yogurt for a lighter version)
- 4 cloves garlic, minced
- 2-inch piece ginger, grated
- 2 teaspoons garam masala
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, combine chicken pieces with salt, turmeric, and half of the garam masala. Let it marinate for at least 30 minutes.
- In a large skillet, melt 3 tablespoons of butter over medium heat. Add minced garlic and grated ginger, sautéing until fragrant (about 1 minute).
- Add the marinated chicken to the skillet, cooking until browned on all sides (about 5-7 minutes). Don’t worry if it’s not fully cooked; it will finish cooking later.
- Stir in the crushed tomatoes, remaining spices (cumin, paprika, and garam masala), and a sprinkle of salt. Allow the mixture to simmer for 10-15 minutes, letting the flavors meld together.
- Reduce the heat to low and stir in the heavy cream, mixing until everything is nicely blended. Cook for an additional 5 minutes.
- Stir in the remaining tablespoon of butter for that luxurious finish. Taste and adjust salt if needed.
- Serve hot, garnished with fresh cilantro, and enjoy over your favorite rice or with warm naan.
