- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup granulated sugar
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 oz red food coloring
- 1 tsp vanilla extract
- 8 oz cream cheese
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, sift together the flour, cocoa powder, baking soda, and baking powder.
- In a separate bowl, whisk together the sugar, eggs, vegetable oil, buttermilk, red food coloring, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Spoon the dough onto the prepared baking sheet, using about a tablespoon for each pie.
- Bake for 10-12 minutes, or until the edges are set but the centers are soft. Cool on the baking sheet for a few minutes before transferring to a wire rack.
- Prepare the filling by beating together the cream cheese and powdered sugar until smooth and fluffy.
- Spread a dollop of the cream cheese filling between two cooled whoopie pies and press gently to create a sandwich.
- Sprinkle a little extra powdered sugar on the outside if desired.
Notes
Start with room temperature ingredients for better blending. Don’t overmix or overbake the cookies.
