Delicious Steak Fajita Quesadillas loaded with marinated steak, sautéed peppers, and melted cheese, perfect for family gatherings.
Ingredients

- 1 lb Skirt steak or flank steak
- 1 cup Bell peppers (mixed colors)
- 1 cup Onions (yellow or red)
- 1 cup Shredded cheese (cheddar, Monterey Jack, or pepper jack)
- 4 Flour tortillas (or corn tortillas for gluten-free)
- 2 tbsp Olive oil
- 1 tbsp Cumin
- 1 tbsp Chili powder
- 1 tbsp Garlic powder
- Salt to taste
- Juice of 1 lime
Instructions
- Marinate the steak in lime juice, cumin, garlic powder, and salt for at least 30 minutes.
- Slice the bell peppers and onions, and sauté them in a skillet with olive oil until soft and caramelized (5-7 minutes).
- Cook the marinated steak in a separate skillet on medium-high heat for about 3-4 minutes on each side for medium-rare. Let it rest, then slice thinly against the grain.
- Assemble quesadillas by layering sautéed veggies, sliced steak, and cheese onto one half of a tortilla. Fold over.
- Cook the quesadilla in the same skillet with oil until golden brown, about 3 minutes on each side.
- Slice into wedges and serve hot with salsa or guacamole.
Notes
Customize fillings to suit your tastes! You can add jalapeños for heat or swap out proteins as needed.
