- 4 medium russet or Yukon Gold potatoes, washed and diced
- 1 lb ground beef, turkey, or chicken
- 2 tablespoons taco seasoning
- 1 cup cheddar or Monterey Jack cheese, shredded
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 avocado, sliced
- 2 tablespoons olive oil
Instructions
- Wash and dice the potatoes into small, even pieces.
- Heat olive oil in a large skillet over medium heat. Add the potatoes and sauté for about 10-12 minutes until golden brown.
- Push the potatoes to one side and add the ground meat. Cook until browned, breaking it apart with a spoon.
- Mix in the taco seasoning until well combined.
- Sprinkle the cheese over the top, cover the skillet, and let it melt for 3-5 minutes.
- Garnish with salsa, sour cream, green onions, and avocado slices before serving.
Notes
For best results, avoid overcrowding the skillet and consider adding sliced jalapeños for an extra kick.
