Description

Ingredients

  • 4 medium russet or Yukon Gold potatoes, washed and diced
  • 1 lb ground beef, turkey, or chicken
  • 2 tablespoons taco seasoning
  • 1 cup cheddar or Monterey Jack cheese, shredded
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 avocado, sliced
  • 2 tablespoons olive oil

Instructions

  1. Wash and dice the potatoes into small, even pieces.
  2. Heat olive oil in a large skillet over medium heat. Add the potatoes and sauté for about 10-12 minutes until golden brown.
  3. Push the potatoes to one side and add the ground meat. Cook until browned, breaking it apart with a spoon.
  4. Mix in the taco seasoning until well combined.
  5. Sprinkle the cheese over the top, cover the skillet, and let it melt for 3-5 minutes.
  6. Garnish with salsa, sour cream, green onions, and avocado slices before serving.

Notes
