- 1/4 cup Soy Sauce
- 1/4 cup Brown Sugar or Honey
- 2 cloves Garlic, minced
- 1 tablespoon Fresh Ginger, grated
- 2 tablespoons Rice Vinegar
- 1 cup Bell Peppers, cut into pieces
- 1 cup Onions, cut into pieces
- 1 cup Zucchini, cut into pieces
- Bamboo or Metal Skewers
Instructions
- Prepare the Marinade: In a bowl, combine soy sauce, brown sugar (or honey), minced garlic, grated ginger, and rice vinegar. Stir until the sugar is dissolved.
- Marinate the Chicken: Cut the chicken into bite-sized pieces and place them in a resealable bag or bowl. Pour the marinade over the chicken, ensuring it’s well-coated. Let it marinate in the fridge for at least 30 minutes.
- Prepare the Skewers: If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
- Assemble the Skewers: Thread marinated chicken onto the skewers, alternating with colorful pieces of bell peppers and onions.
- Preheat the Grill: Heat your grill to medium-high.
- Grill the Skewers: Cook the skewers for about 10-15 minutes, turning occasionally until the chicken is cooked through and reaches an internal temperature of 165°F.
- Serve: Drizzle any leftover marinade over the cooked skewers for extra flavor.
Notes
Marinate longer for enhanced flavor. Baste skewers with leftover marinade during grilling for extra taste (only if it hasn’t touched raw chicken).
