- 2 cups white beans (cooked or canned)
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 carrots, diced
- 4 cups vegetable broth (or chicken broth)
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- Salt and pepper to taste
- 2 cups fresh spinach or kale
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent, then add minced garlic until fragrant.
- Stir in diced carrots and cook for a few minutes until they soften.
- Add the white beans and broth to the pot, bringing it to a boil.
- Incorporate chopped rosemary and thyme, and season with salt and pepper.
- Reduce heat and let the soup simmer for at least 20 minutes.
- Before serving, stir in fresh spinach or kale until wilted.
- Taste and adjust seasoning as needed, adding a squeeze of lemon juice for brightness.
