Description

A comforting and flavorful soup made with white beans, aromatic herbs, and vegetables, perfect for chilly evenings.


Ingredients

  • 2 cups white beans (cooked or canned)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 4 cups vegetable broth (or chicken broth)
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 cups fresh spinach or kale

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent, then add minced garlic until fragrant.
  2. Stir in diced carrots and cook for a few minutes until they soften.
  3. Add the white beans and broth to the pot, bringing it to a boil.
  4. Incorporate chopped rosemary and thyme, and season with salt and pepper.
  5. Reduce heat and let the soup simmer for at least 20 minutes.
  6. Before serving, stir in fresh spinach or kale until wilted.
  7. Taste and adjust seasoning as needed, adding a squeeze of lemon juice for brightness.
